Sorry, I'm fairly new to this, but could I have an example or two of how to use that phrase correctly?

It's used like 言い足す

But you would have to ask a native for nuance differences.

お礼の言葉を言い添える how bout this? its taken from yahoo's japanese dictionary
-
お礼の言葉を言い添える To add an expression of gratitude (or formality) to what was previously said.
言い添えれば is typically used to begin a new sentence (in writing) to the effect of "In addition," .
「実際、」 「その上、」 「それに、」 are other expressions that are typically used in similar circumstances.

Thinking about the situations when “お礼の言葉を言い添える” can be used;
A mother suggested me, “do not forget to say first to express your gratitude in words before talking to him.”
“彼にお話しする時、先にきちんとお礼の言葉を言うのを忘れては駄目よ”
or
“Of course, he did not fail to add his gratitude to your advice although he seemed to have an opposit idea.”
“彼は、正反対の考えを持っているようだけど、あなたの助言に感謝していました。”
or
“Before talking, I would like to express my sincere gratitude to all the people who have helped me so far in one way or another”
“お話させていただく前に、私をこれまで支えてくれたすべての人に心から感謝の意を表したいと思います。“
I can’t imagine other contexts than these to use this Japanese word and thus “add to what was previously said” seems to me a very limited occasion.
